What to do with leftover holiday wine

Happy New Year! If your New Year's Eve party was anything like mine, you might find yourself with a couple half-empty bottles of sparkling wine hanging out in your fridge. If you can't drink it all yourself, why not upcycle it into some delicious Ciambelle al Vino or Italian Wine Cookies? These cookies are not very sweet and go well with coffee in the morning or wine in the evening (no judgment!). Cheers to 2018!

Italian Wine Cookies (Ciambelle al Vino)

• 1/2 cup sparkling wine (it's ok if it's a little flat)
• 1/2 cup sugar
• 1/3 cup olive oil
• 1/4 teaspoon salt
• 1/2 teaspoon baking powder
• 2 1/4 cups flour
• sugar for coating


1. Pre-heat oven to 350°F
2. In mixing bowl combine wine, oil, sugar, salt and baking powder. Mix well then gradually add the flour in and mix until it comes together.
3. Transfer to a floured flat surface and knead lightly; don’t overwork the dough.
4. Roll dough into a rope and cut off in 5 inch segments. Bring ends together to form a circle and place on parchment lined cookie sheets. Sprinkle with sugar then bake until golden brown (25-30 minutes).
